It is Windows 8.1 Enterprise RTM zh-CN (Chinese Simplified)
I'm sorry I don't speak Chinese, and I don't think there's any way to change language currently,

at least until they make the language packs available through control panel's Add a Language option.

There is no way to activate it as it is KMS v6 and current methods activate KMS v5.
Use at your own discretion.

 

Any attempt to change language using previous language pack or release build files would be only 95ish percent complete. Some apps would still be in Chinese and a lot of the system strings would still be in Chinese. It's the same way for all localized Windows versions. It's tolerable if you get a decent mod on, but if you really just want everything in English, you'll need to wait for English leaks. I've heard that an x86 pro leak is coming from the Russians, but I don't remember if it's in Russian or English...
